Rocío Gandarias began her professional career at the end of the 1970s.
Always linked to good food, through her own family she was witness to some of the most sublime and excellent moments in terms of gastronomy, protocol and the organisation of private events.
Rocío was able to revolutionise the concept of “catering”, using young, perfectly uniformed waiters that knew that art of serving to perfection for her events. The food, always based on the excellence of the raw produce, was another of the keys so that the word of mouth started to work.
The business took off at a staggering speed. Rocío, helped by her 8 children, prepared food for 3,000 people day in, day out. And just as she herself said: “everything was prepared with a pencil and paper”.
Finca Las Jarillas and Convento del Carmen are examples of a catering company that has not stopped growing as the years have gone by. In October 2017, Rocío Gandarias acquired Commodore, a legendary venue in the centre of Madrid, proving that she is still in top form.
This is a family business of various generations, built on the foundations of effort, dedication, enthusiasm, passion and, above all, good work.
